John Wilmot was an English poet, aristocrat, and libertine, who preceded the Marquis de Sade. It's also the name that Eugeni de Diego – one of the former head chefs from the glorious era of ElBulli – gave to his tapas bar: Colmado Wilmot.

"I wanted to move away from the traditional idea of a colmado or a local bar, to give it an international touch. But I wanted it to be down-to-earth, a place where anyone could come and have a good time. I'm from Badalona, you know?" explains the chef-entrepreneur. He defines Wilmot as "a little bar where you can go out spending 20 euros, eating tortilla and capipota, but where we can also add elvers to your fried eggs."

Be cautious with elaborate sautés and complex stews. And of course, this is vermouth paradise, with sardines, gildas, anchovies, and a homemade Maresme-style apéritif sauce."
